Lemon Butter (and the importance of FATS!)

Let's talk about fat for a minute. For decades fat has been vilified as the health enemy number one and the root cause of multiple health issues. Yet, what is overlooked is how important fat is for cellular health. The membrane that surrounds all our cells is made up of lipids (a type of fat) and the consumption of fats and oils is essential to maintain the integrity of cell structure. More importantly, fat derived from animal sources contains cholesterol (another vilified substance) — cholesterol constitutes the foundational substrate for the creation of most of our hormones and particularly our stress and sex hormones — so it is a key component of our hormonal health.

Now, what is important in this post is how the fat of the butter is combined to allow the digestive system (via bile salts) to break it down and absorb it. The combination of thyme + preserved lemon + garlic makes for the perfect blend with butter for both flavor and the absorption of this essential nutrient. Rub this butter on chicken and throw in the oven for an incredible roast. You may also add to squash before roasting.

LEMON BUTTER


You'll need the following ingredients:

  • large bunch of fresh thyme

  • 1/2 a preserved lemon

  • 6 tablespoons of butter

  • 4 cloves of garlic

To prepare:

  1. Place all ingredients in the blender or Cuisanart and blend until all ingredients have mixed.
